Healthy pancakes

We had unhealthy pancakes on Shrove Tuesday, two types in fact, but a recipe I love, so thought I’d share, is this healthy banana and oat version.

Banana and oat pancakes

Ingredients

1 x ripe banana

3 x eggs

1 x cup of oats

¼ teaspoon of cinnamon

Splash of water

Butter for cooking

Method

  • Mash the banana
  • Whisk in three eggs with a fork
  • Pour in the cup of oats and a splash of cold water
  • Stir through ¼ teaspoon of cinnamon or more to taste
  • Heat butter in a frying pan
  • Fry for about three minutes on each side, or until cooked all the way through
  • I make about six small ones with this amount of mixture
  • Serve with berries (and maple syrup to make them unhealthy…)
