We had unhealthy pancakes on Shrove Tuesday, two types in fact, but a recipe I love, so thought I’d share, is this healthy banana and oat version.

Ingredients
1 x ripe banana
3 x eggs
1 x cup of oats
¼ teaspoon of cinnamon
Splash of water
Butter for cooking
Method
- Mash the banana
- Whisk in three eggs with a fork
- Pour in the cup of oats and a splash of cold water
- Stir through ¼ teaspoon of cinnamon or more to taste
- Heat butter in a frying pan
- Fry for about three minutes on each side, or until cooked all the way through
- I make about six small ones with this amount of mixture
- Serve with berries (and maple syrup to make them unhealthy…)
